Before you Goa, wrap up a present to yourself

Wonderfully easy wrap that’s perfect for lunch or a light dinner.


  • 100g chicken breast
  • 20ml olive oil
  • 50g fresh or frozen prawns (defrosted)
  • 45ml coronation mayonnaise
  • 1x plain wrap (25cm)
  • Greek lamb spice (flatbread rub infusion)
  • 10g baby lettuce
  • 10g rocket
  • 20g sweet piquante peppers
  • 20g cucumber
  • 60g cocktail tomatoes


Rub chicken breast lightly with olive oil and heat a cast iron griddle pan until hot.

Sear meat on both sides, before cooking through.

Remove from the pan and allow chicken breast to rest for five minutes before slicing into thin strips.

Add the prawns to the cast-iron griddle pan and cook through quickly until pink.

Add the coronation mayonnaise and sliced chicken strips and heat through.

Toast the wrap lightly under the grill and then season with Greek lamb spice.

Pile salad leaves, sweet piquante peppers, cucumber and cocktail tomatoes on top of the toasted and spiced wrap.

Spoon on the creamy chicken and prawn and remaining olive oil. Wrap if desired.
